Method
- Preheat oven to 400 degrees Fahrenheit.
- Grease a 9" cast iron skillet or cake pan.
- Add the cornbread mix to a large mixing bowl.
- In a small bowl, whisk together the milk and honey, until mixed.
- Pour the egg mixture into the dry ingredients, add the mashed sweet potatoes, and honey if using. Mix everything until incorporated. Batter may be a little lumpy.
- Pour the batter into the prepared pan.
- Bake in a preheated oven for about 20 minutes or until an inserted toothpick comes clean.
- Serve warm or at room temperature.

To make this dairy free use almond milk or another milk substitute.
The honey is optional, if you like a more savory bread feel free to leave it out.
