Ingredients
  

  • 1 Cup Sugar
  • 1 ¾ Cup Unbleached All-Purpose Flour
  • ¾ Cup Cocoa Powder
  • 1 teaspoon Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Espresso Powder Optional
To Bake the Cake
  • The Above Cake Mix
  • 2 Large Eggs
  • 1 Cup Milk
  • ½ Cup Vegetable Oil or Melted Butter
  • 2 teaspoons Vanilla Extract
  • 1 Cup Boiling Water

  1. To Make the Mix:
  2. Put all of the ingredients in a large bowl and mix extremely well. A balloon whisk is ideal for this task.
  3. Pour the cake mix into a glass jar or other airtight container and store until ready to use.
  4. To Bake a Cake from the Mix:
  5. Preheat oven to 350℉
  6. Grease two 9" round cake pans or a 9X13 inch pan.
  7. In a large mixing bowl, dump the cake mix. Set aside.
  8. In a medium bowl, whisk together the eggs, milk, oil, and vanilla until completely combined.
  9. Add the wet ingredients to the dry ingredients and mix well.
  10. Pour the boiling water into the mix, stirring to combine completely. It will be a thin cake batter.
  11. Pour into the prepared baking pans.
  12. Bake in the preheated oven: 25-30 minutes for the round pans 35-40 minutes for the rectangular pan. An inserted cake tester will come out clean when done.
  13. Let cool on wire rack and frost as desired when cool.
