Method
- Wash fresh herbs to remove any dirt from them. If your doing multiple herbs, do them in separate batches.
- In a medium sauce pan, bring water to a simmer.
- Add clean herbs and sugar.
- Bring to a boil.
- Turn off the heat, cover the pan, and let it sit for 15-20 minutes.
- Strain the herbs from the syrup and pour the syrup into a clean jar.
- Label the jar and put the lid on.
- Store the herbal simple syrup in the refrigerator. Use within a month.

Basil Syrup - 6 three inch springs
Rosemary Syrup - 4 three inch springs
Thyme Syrup - 6 three inch sprigs
Sage Syrup - 5-6 leaves
Lavender Syrup - 1 Tablespoon fresh lavender buds
Mint Syrup - 4 three inch sprigs
Elderflower Syrup - 3/4 cup flowers
