- Combine water and sugar in a medium sauce pan
- Heat over medium heat until the sugar is dissolved.
- Remove the pan from the heat and let cool.
- Pour the syrup into a clean jar or bottle.
- Store in the refrigerator.
- Use within a month.
Notes
Variations
Add herbs or fruit pieces to simmering syrup for flavored syrups. Mint, lavender, rosemary, hibiscus, berries, lemon and lime are all good as flavored syrups. To make chocolate simple syrup add 1/4-3/4 cup cocoa to simmering syrup. For canning use the following amounts
To make a very light syrup combine 6 1/2 cups water with 3/4 cup sugar.
To make a light syrup combine 5 3/4 cups water and 1 1/2 cups sugar.
To make a medium syrup combine 5 1/4 cups water and 2 1/4 cups sugar.
To make a heavy syrup combine 5 cups water and 3 1/4 cups sugar.
To make a very heavy syrup combine equal amounts of water and sugar.
