Great question, Tanya! Young flower stalks are edible — you can eat them raw or lightly cook them like any green. As they mature and go to seed, the seeds can be harvested and used similarly to psyllium husk as a source of soluble fiber. Nothing goes to waste with plantain!]]></description>
