Rhubarb leaves have a high amount of oxalic acid in them making them inedible for people or animals. However, the leaves can be composted. Once the leaves have been removed you are left with the edible stalks. 

If you aren’t harvesting your own rhubarb you can buy it in season at the farmers market or grocery store. 

Rhubarb stalks look like celery but depending on the variety it can have vibrant red stalks, pink stalks or  green stalks. Choose firm stalks and store rhubarb in a plastic bag or plastic bag in the refrigerator until you’re ready to use it. 

Raw rhubarb can be cut a day or two before using, it will need to be stored in airtight containers until your ready to use it. Rhubarb can also be frozen for future use. Frozen rhubarb will produce more juice when it thaws, and it also bakes up beautifully.
