I made this cake today however I made it using Bobs Red Mill Gluten Free All Purpose Flour and a plant based butter to make it more allergy free. The cake was moist and tasted pretty good, my husband even enjoyed it

In reply to Blake. You can use 2 whole eggs instead of the 3 egg whites but it might be more of a yellow cake instead of a white cake... It's just a color thing it won't change the flavor in a way that matters.
