I don't think it would make much of a difference, however, you do want to the stew to be somewhat liquidy and not crammed full of veggies so that there's even heat distribution. That's the only thing you'd need to be mindful of. You can always add more frozen veggies when you heat up the stew to eat.

I like the sounds of this. My question tho is 18 cups could be different if using big or small chunks. I like to use Birdseye frozen mix vegetables. Would I still use 18 cups since they are small? I wish it could be measured in pounds. It probably doesn’t even matter. Sorry and thanks.

This made 14 24 oz jars, canned with enough for 2 servings that wouldn’t fit in the canner. All I can say is “WOW”. I get over how good it is and I’m sure it will be better over time.

It does effect the processing time - that remains unchanged. One thing to consider is that fully cooked and then pressure canned make effect texture in a way that is too soft but you won't know until you try.

I am currently cooking a large crockpot full of homemade vegetable beef soup. Can the leftovers (fully cooked) be canned and if so how does the fact it's fully cooked effect the processing time?
